Recipe: Smoked Baked Beans
PREP TIME: 45 minutes
COOK TIME: 3 hours
SERVES: 8-12 people
INGREDIENTS:
1 green pepper
1 white onion
2 cloves of garlic
Olive Oil
2 Tablespoons BBQ Rub
28oz baked beans
1/4 cup ketchup
1/8 cup yellow mustard
1 tablespoon Worcestershire sauce
Optional but suggested:
1 pound of smoked pulled pork
Supplies:
Smoker or oven
Wooden spoon
STEPS:
Load char hickory and cherry pellets in smoker.
Preheat smoker to 250°.
Finely chop one green pepper and one white onion.
Mince two cloves of garlic.
Put Dutch oven on stove and turn heat to medium.
When heated, drizzle about 3 tablespoons olive oil in bottom of the Dutch oven.
Add chopped pepper and onion.
Stir and allow to cook down for a few minutes.
Add minced garlic to pepper and onion and stir well.
Season with 1 tablespoon BBQ Rub
Cook down pepper, onion, and garlic on medium heat.
Reduce heat to low and add baked beans
Add ketchup, mustard, Worcestershire sauce, barbecue sauce
Mix well.
If you have cooked pulled pork ready, add one pound now and mix together.
If you are cooking pulled pork simultaneously, then mix in one pound at the end.
Add - uncovered - to Traeger at 250° for 90 minutes.
At 90 minute mark, add the Dutch oven cover.
Keep on Traeger at 250° for an additional 90 minutes.
Remove and serve delicious, smoked, baked beans!
(Add one pound pulled pork before serving, if not done earlier.)
