Recipe: Bourbon Chicken
PREP TIME: 20 minutes
COOK TIME: 35 minutes
SERVES: 4 people
INGREDIENTS:
3 pounds boneless, skinless chicken thighs
½ cup soy sauce
4 cloves of garlic, crushed
2 teaspoons ginger
½ cup apple juice
1 teaspoon crushed red pepper
2/3 cup brown sugar
4 Tablespoons ketchup
2 Tablespoons Apple Cider Vinegar
4 teaspoons sesame oil
2 cups rice
STEPS:
Prepare Ingredients
Measure each of the ingredients listed and set aside in separate containers.
Make the Sauce
In a bowl, whisk the soy sauce, garlic, ginger, apple juice, crushed red pepper, brown sugar, ketchup, and apple cider vinegar.
Set aside.
Cook the Chicken
Cut chicken into 1-inch chunks.
Heat a wok or large skillet on medium heat, until water droplets sizzle.
Add 2 tablespoons sesame oil, coating pan as it heats up.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add the sauce to the wok or large skillet, and heat until well mixed and dissolved.
Add chicken thigh chunks back and bring to a hard boil.
Reduce heat and simmer for 20 minutes.
(While this simmers, prepare rice - see below.)
Prepare the Rice
Use Minute Rice
Measure 2 cups of water
Add to pot on stove and bring to a boil.
Once boiling, add 2 cups of rice to water.
Stir and cover, removing from heat.
Set timer for 5 minutes.
Finish the Cook
Scoop ½ cup of cooked rice onto each plate.
Add chicken thighs and sauce.

*Some people claim it was named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.
